The first course is vegetarian and consists of raw seasonal vegetables, salad, steamed vegetables and other vegetarian antipasti, using seasonal vegetables grown in their organic gardens when possible or sourced locally. Your second course will be a choice of à la carte meals, specific to you and your blood type. All meals are served in the Higia Restaurant, which also has an open-air dining pavilion facility when weather permits. The restaurant has stunning views of the sugarcane, coffee plantations and volcanoes with the soothing sound of the river in the background.  The food here is bioenergetic and contains the freshest produce locally sourced.
